Salt ≠ NaCl

Salt is good, but if salt has lost its taste, how shall its saltiness be restored?

While road-tripping recently, my wife and I endured one of those miserable breakfast buffets that have become ubiquitous at cheap motels. They’re all white-flour waffles and bagels and cereal, with vile coffee and pasteurized, freezing-cold orange juice dispensed from a mechanical spout. Seeking something slightly less processed and sugar-fortified, my wife brought back to the particle-board table an anemic hard-boiled egg, sourced, no doubt, pre-peeled and individually shrink-wrapped from Sysco, the “nation’s largest food service marketing and distribution company” and trademark holder of the country’s most unappetizing corporate slogan.
